Custom Crush
It all started when…
We moved to our current winemaking facility on Suburban Road back in 2008. While producing our Stephen Ross and Flying Cloud Wines, we found that we had enough room in our facility to take on custom crush and alternating proprietor projects.
We work in collaboration with with our clients to make wines that both parties are proud of. From fruit processing to bottling, we will help you create the wines you want to make. We help clients produce white, red, rosé, and base wines for sparkling wine.
For all custom crush and alternating proprietor projects, we have an annual minimum of 10 tons and an annual maximum of 30 tons. Lot sizes must be a minimum of 1.5 tons and 100 case bottlings.

Receiving, crushing, fermenting, pressing, and moving to tank or barrel
Receive barrels and racks prior to harvest
Rinse and prepare barrels
Receive grapes
Destem or press for juice
Lab analysis for brix, pH, TA
Monitor alcohol fermentation and ferment grapes and/or juice
Press and transfer to barrels
NOTE: For white wines, we are able to help you from press to bottle, or we can press and then ship the juice to be fermented elsewhere.

Top wine every four weeks
Maintain SO2 and moisture in empty barrels
Steam clean barrels
Stainless Steel Tank Storage
Tank sizes: 350 gallons, 450 gallons, 750 gallons, 1,730 gallons, and 3,100 gallons
